This course combines hands-on chocolate production and demonstrations on small scale industrial plants with company visits and theoretical input. The theoretical knowledge is provided by the technical instructors of the ZDS as well as by external speakers of specialist companies. During the practical parts the participants produce the products in small groups as well as watch demonstrations using the ZDS' own pilot machinery that allows upscaling. This is hence a direct benefit for the later application in the participant’s company. Raw materials and additives are presented in detail with their characteristics; example recipes are provided as well. Supplementing the course program participants have the possibility to suggest additional relevant topics. To complement the course, visits to manufacturers of machinery, semi-finished and finished products are included.

Who should attend?
This course is intended for executives, members of management, company founders, product developers, production staff and purchasing agents who wish to complete their knowledge about chocolate.
The uniqueness of this course lies in the possibility to obtain not only a certificate of participation, but a diploma in chocolate technology when passing the practical, written and oral exams. The ZDS offers diploma in the 2-week sugar confectionery and in this course only. Our diploma is internationally highly recognized.
COMBINATION: 4-weeks CHOCOLATE + 2-weeks SUGAR CONFECTIONERY
Booking both courses is beneficial as the ZDS offers a price discount. The course fee for both, sugar confectionery and chocolate (6 weeks in total), amounts to 13.653,00 € for non-members and 10.953,00 € for ZDS members. Booking is company not person related so that a company can book both courses with different persons attending the parts.
The price includes accomodation in a centrally located 3-star hotel close to the city center of Solingen (single room, incl. breakfast, incl. transfer hotel - ZDS).
Upon arrival the ZDS offers information about interesting sightseeing and leisure activities, about public transport, shopping, etc. Furthermore regional leisure trips are organized by the ZDS that can be attended by the participants on voluntary basis.
On the last evening of the course a casual farewell dinner with handover of the diploma is given for the participants.
