Having trouble with shelf life? During this workshop you will learn and understand how to increase shelf life for baked goods. This course offers theoretical and practical solutions to extend the shelf life of baked goods and to improve the quality of the end products through reformulation, the selection of ingredients and packaging.

The workshop is very hands-on and will visualize the product development solutions in respect of:

  • Theory on shelf life
  • Understanding roles of ingredients and processing on texture and shelf life
  • Understanding what choices to make when adapting product to packaging or packaging to product
  • Formulation and processing guidance during training of current and new to be developed cake products
  • Q&A on shelf life & cake (developments)
  • Close interaction with instructors due to small classes
