The trend to launch more plant-based foods as dairy and meat substitutes will continue. In order to develop modern products, innovative ingredients, technological know-how and well thought product concepts are required.
In the ZDS seminar „Future of confectionery: Ingredients for sweets“, we will deal intensively with the topics of food pairing, reformulation and protein and fibre enrichment.
Furthermore, we will take a look at international markets and benefit from their experience with novel food ingredients. A further topic is the legal basis and the general conditions for processing of new types of ingredients.
