Consumers‘ expectations for confectionery products are constantly increasing: In addition to excellent taste, many consumers also expect that „special extra“ - either in the form of healthier, sugar- and fat-reduced confectionery, functional/enriched snacks or products with a special „mouth-feeling“.

The trend to launch more plant-based foods as dairy and meat substitutes will continue. In order to develop modern products, innovative ingredients, technological know-how and well thought product concepts are required.

In the ZDS seminar „Future of confectionery: Ingredients for sweets“, we will deal intensively with the topics of food pairing, reformulation and protein and fibre enrichment. 

Furthermore, we will take a look at international markets and benefit from their experience with novel food ingredients. A further topic is the legal basis and the general conditions for processing of new types of ingredients. 
The seminar is rounded off by lectures on biochemical and physical process steps.
